Lime is a natural hybrid of citrus fruit of citron and papeda. True lime is native to South East Asia. It is similar to lemon but more spreading and irregular in growth. It has been introduced into Southern Europe, the West Indies, Mexico, Florida, and California. Chief production is in tropical regions of the Old and New World. Lime extracts (as powder) and lime essential oils are frequently used in perfumes, detergents, cleaning products, and aromatherapy. It is also a common ingredient in authentic Mexican, Vietnamese, Indian, Persian, Iraqi and Thai dishes. Lime is also used for flavouring for desserts, condiments, salad dressings, meats, and vegetables.

Thai lime
Lime is one of the major economic plants of Thailand. It is used as ingredient to season food for sour taste and its unique fragrance. The consumption volume of limes in Thailand has now reach thousands of tons a year. Although limes can grow in every region of Thailand and bear fruits throughout the year, the amount of lime produces varies from season to season. There is also increased demand of lime powder which has the same quality as fresh limes for use in the food industry, which is Thailand's strategic industry, particularly in restaurants both in the country and abroad, to make up for fresh limes in the time of shortage. Commercial production of concentrated lime juice and lime powder is possible throughout the year in case fair buying prices is guaranteed to lime producers and industrial investors.
