Sweet potato, a dicot, is native to tropical America, was brought back to Spain in 1492 then introduced to African lands by the Portuguese. Despite its appearance, the sweet potato is classified as a storage root unlike, the potato which is a tuber. Sweet potatoes have a creamy texture and a sweet-spicy flavour that makes them ideal for savoury dishes. There are two types, one with bright orange flesh, and the other with pale cream flesh. The sweet potato must not be confused with the common, white or Irish potato or with the yam, to which it is botanically unrelated. Sweet potatoes are served as a cooked vegetable, in whole or mashed form and are used as pie filling. They are also eaten boiled, baked fried, or dried and ground into flour to make biscuits, bread, and other pastries.

Thai sweet potato
In Thailand, sweet potato farming has always been practised by small-scale farmers for home consumption and as a source of income, but now the crop is being grown commercially with cultivated area of 40,000 ha, mostly in the centre of the country (36%) followed by the south (27%), north-east (27%) and the north (10%). The tubers are used as a subsidiary food and as a source of sugars and starches for industrial processing. All three types of light, medium and heavy sweet potatoes are cultivated throughout Thailand.
