Wheat is a cereal grass. It is one of the oldest and most important of cereal crops. The flowers are grouped together in spikelets, each having two to six flowers. In most spikelets, two or three of the flowers become fertilised, producing grains. There are thousands of varieties of wheat known. Wheat is used in making bread, pasta and cake. Some wheat is simply prepared by soaking and cooking the grain for use in porridge, broth or pudding. More of the world’s farmland is devoted of wheat than to any other food crop.

Thai wheat
Thailand has been actively promoting wheat production in the cooler northern region since 1987. In the past several years, wheat area has risen to nearly 1,000 ha. Wheat production is now, however, at watershed. Moreover, wheat typically has a relatively low cash input requirement, and uses little labour. Local production supplies less than 1% of the country’s wheat requirement.
