Thai rice is generally classified into three main categories:

    • Non-glutinous rice Hom Mali rice has lower amylose content than drier long-grain varieties. Its distinctive aroma, often likened to the sweet, earthy scent of pandan leaf, is what made it renowned worldwide.
      Glutinous rice Kheow Ngu is a premium cultivar prized for its exceptional texture. It is extremely sticky yet remains tender and soft, without becoming stiff, hard, or overly chewy when cooled.
      Health-focused rice Riceberry is a whole grain, meaning the nutrient-rich bran and germ layers are left intact after milling, leading to an impressive nutritional profile compared to white rice.
